I would like to use a dissipator Zalman to the place of the 2 fans of my
Voodoo 5. what dissipator zalman is compatible?

Their 'Silent Northbridge' (A56AA on the box mine came in) is
compatible, although it's pretty expensive for what it is (well
engineered though) and of course you would need two of them & about 3
free PCI slots ;-)

Any Northbridge cooler should fit.

Thank you, but... I search for a think like Zalman ZM80C-HP for Voodoo 5.

Not a chance ;-)

Those massive heatsinks would only fit a certain range of cards, and the
V5 simply doesn't put out so much heat that you'd need something like
that anyway ;-)

Have a look for some old fanless Pentium heatsinks, the old Compaq
Despot ones are handy for cutting up if you want to glue them on. If
you've got the money just get a couple of northbridge fans, then you
should be able to clip them on using the existing holes in your V5's
PCB.
